What you'll need

  • 1/2 cup passionfruit pulp or unsweetened puree
  • 3 cups cold water
  • 1/4 cup superfine sugar
  • 1 small pinch fine sea salt
  • 2 cups ice
  • 4 lemon wheels, for garnish

Let's make it

  1. Whisk lemon juice, passionfruit, sugar, and salt until the sugar dissolves.
  2. Stir in cold water and chill for 5 minutes.
  3. Pour over ice and garnish each glass with a lemon wheel.
