Carrot Beet Apple Juice

A vivid ruby juice that pairs sweet carrot and apple with earthy beet, fresh lemon, and a little ginger.

⏱ 10 min🍹 2 servings🌈 Easy joy

Carrot, beet, and apple make a naturally colorful juice with earthy-sweet depth. Lemon brightens the finish, while ginger adds a small spark. This measured blend is easy to run through a cold-press juicer and looks beautiful poured over ice in a clear glass.

Keep the beet balanced

A small beet seasons the whole batch, so start with the amount listed. For a gentler earthy note, use a smaller beet and keep the rest of the recipe the same.

What you'll need

For 2 sippers
  • 4 medium carrots, washed and trimmed
  • 1 small red beet, scrubbed and trimmed
  • 1 medium red apple, cored
  • 1/2 medium lemon, peeled
  • 1/2-inch piece fresh ginger
  • 1 tablespoon agave syrup
  • 1/2 cup cold water, only for the blender method

Let's make it

  1. Cut the carrots, beet, apple, and lemon into pieces that fit your juicer.
  2. Juice the carrots, beet, apple, lemon, and ginger. Stir well; the beet color will deepen as it mixes.
  3. If you would like a sweeter glass, stir in the optional agave amount shown in the ingredients. Pour into serving glasses and serve immediately over ice, if desired.
  4. Blender method: blend the produce with the measured cold water until smooth, then strain through a fine nut-milk bag.
